Badook Badook - a crunchy instant pickle

Ingredients
  

  • 1/2 cup Kakdi/cucumber not the khira but the heirloom variety
  • 1/2 cup tindola/ivy gourd
  • 1/2 cup capsicum/bell pepper
  • 1/2 cup cauliflower
  • 1/2 cup cabbage
  • 1/2 cup of oil I used peanut
  • 1/3 cup of methi masalo/gujarati pickling spice mix

Method
 

  1. Wash, dry and chop all the vegetables in equal sized small cubes
  2. Pour over the oil and mix well with your hands.
  3. Sprinkle methi masalo gradually and coat everything well.
  4. Transfer it into a glass jar with lid.
  5. Enjoy with khakhra, bhakri, puri or even rotli.
  6. Stays well for upto 3-4 weeks in the fridge.
